This bubble pizza casserole recipe, which is also known as bubble up biscuit pizza, is a delicious alternative to take out. Instead of a pizza crust you use buttermilk biscuits along with a sausage filling and two kinds of cheese.
This bubble pizza casserole calls for just a few ingredients. We like it with Italian sausage and pepperoni but you could use ground beef or turkey. You can also customize it with the toppings of your choice. You could also leave out the meat and just use veggies and cheese.
As for cheese, I used to use pre-shredded but I think shredding your own just tastes better. I recently purchased this food processor, which was within my budget and shreds the cheese in seconds. It’s already paid for itself because I use it so much and it’s cheaper to shred your own cheese.
Bubble Pizza Casserole – Quick and Easy Dinner Idea
This bubble up pizza bake is sure to be a hit with both adults and kids and would be great to serve with a salad to complete the meal. The first time I made this I used a little over a pound of sausage. It was very filling but I found it to be a little too rich. I now make it with just a half pound of sausage and include pepperoni on top.
This delicious bubble pizza casserole is quick and easy to make and easy to customize. You can even skip the meat and go with a variety of veggies for a meatless meal.
- 1/2 pound ground Italian sausage
- 1 (14 ounce) jar pizza sauce
- 1 1/2 cups shredded mozzarella
- 1 cup shredded cheddar cheese
- 4 ounces pepperoni (thinly sliced)
- 2 (12 ounce) cans biscuits
- Additional Toppings (optional) See notes.

Preheat oven to 400 degrees F. Spray 13X9 inch casserole dish with nonstick cooking spray.

In a large skillet, cook ground Italian sausage until no longer pink and drain excess grease (if using link sausage, remove sausage from casings before browning).

Stir in pizza sauce and heat through.

Cut each biscuit into four pieces (a pizza cutter or kitchen shears works great for this). Arrange biscuit dough in the bottom of casserole dish.

Spread sausage mixture over biscuits. Bake uncovered for 20 minutes.

Spread mozzarella and cheddar cheese over sausage mixture and top with pepperoni. Bake uncovered another 5 or 10 minutes or until cheese is melted.
You can easily customize this pizza by adding a variety of your favorite pizza toppings such as black olives, mushrooms, green peppers and onions.
If adding chopped peppers and onions you might want to add them to the sausage mixture instead of on top of the pizza so they have a little more cooking time. Just add to the sausage during the last few minutes of cooking time to soften, then drain the grease.
Serving Suggestion:
Serve this delicious bubble up biscuit pizza with a green salad, or cut up celery and blue cheese.
