Pineapple Cheddar Cheese Casserole

This pineapple cheddar cheese casserole is one of those recipes where the ingredients don’t make much sense. However, the combination of sweet and savory in this easy scalloped pineapple dish is sure to become a family favorite.

Pineapple Cheddar Cheese Casserole (Scalloped Pineapple)

This easy pineapple casserole recipe calls for just a few ingredients that you may already have on hand.

The original recipe calls for a full cup of sugar but I find that it's sweet enough with half the amount. After all, you will get plenty of sweetness from the pineapple.

Ingredients
  • 2 cups shredded sharp cheddar cheese
  • 6 tablespoons all purpose flour
  • 1/2 cup sugar
  • 2 (20 ounce) cans pineapple chunks (reserve 6 tablespoons pineapple juice for the topping)
  • 1 cup crackers, crushed (we like Ritz)
  • 1/2 cup (1 stick) butter, melted
Instructions
  1. Preheat oven to 350 F. Spray a medium size casserole dish with cooking spray (I use an oval casserole dish that is about 2.5 quarts).

  2. Place the shredded cheese in a large bowl. In a smaller bowl, combine the flour and sugar and toss with cheese until combined. Stir in the pineapple and pour into casserole dish.

  3. Combine the reserved pineapple juice, crackers and melted butter and spread over pineapple-cheese mixture.

  4. Bake uncovered, for 25-30 minutes or until top is golden brown. Serve warm.

Pineapple Casserole Recipe Tips

I like to use the canned pineapple chunks  packed in its own juice. After reserving the six tablespoons for the recipe you can use the rest of the pineapple juice for another recipe.  Since I always serve this recipe with ham, I like to mix the pineapple juice with a few tablespoons of brown sugar and pour over the ham for added flavor.

You could use pre-shredded cheese but I find that it tastes much better with cheese that you grate yourself. I used to use an old fashioned box grater but I find that my food processor gets the job done much faster.

This recipe makes about 10 side dish servings. This pineapple casserole is savory yet rich, so one pan will feed a lot of people as long as you are serving other sides as well. If your family is like mine, you always have plenty of tasty side dishes as part of your holiday buffet!
